Scientists
and connoisseurs of growing peppers use a scale which is called the
Scoville scale:- The Scoville scale measures the hotness or
piquancy of a chili pepper, as defined by the amount of capsaicin
it contains. Capsaicin is a chemical compound which stimulates chemoreceptor
nerve endings in the skin, especially the mucous membranes. The number
of Scoville heat units (SHU) indicates the amount

To
give you some idea of how the Scoville scale works, a bell pepper
is assigned 0 units, a Jalapeno is 2,500-8,000, a Scotch Bonnet is
100,000-350,000, and pepper spray is Five million SHU.
At
The Spice of Life
we feel that the Scoville scale is rather complicated for those of
us who are not connoisseurs of growing chillis but who do like Eastern
and Oriental foods. We have produced a simplified heat scale from
1 to 10, which we call The Spice
of Lifescale.
Our chefs have designed nine distinctive spice (masala) mixes: 7 mixes
that range from around a 2 to a 7, and on our scale, our number 7
is equivalent to a Jalapeno, which makes even the hottest of the 7
not particularly hot but packed with rich spicy flavours. The other
2 are roughly on a par with Scotch Bonnet and we have given them an
8 and 9 respectively. In this way we can cater for all tastes.

* Tandoori
comes from the word tandoor which is a special clay oven. We appreciate
that you don't have a Tandoor so we have designed this particular
spice mix to mimic that smoky earthy flavour synonymous with dishes
of this kind.
As
previously stated, the right spices are the key to all good Indian
dishes. Many factors can govern the quality of the spices used in
a recipe, such as the climate and soil type they were grown in,
how much sun and rain they got, how the spices were picked and,
very importantly, how the spices were stored before they reached

how we store them. We, of course, keep our spices in optimum conditions
before and after they are blended.
